Roasted Rainbow Carrots with Danish Feta and Candied Honey

Recipe - Roasted Rainbow Carrots with Danish Feta and Candied Honey

A selection of rainbow carrots or a medley of root vegetables
2 tbsp of olive oil
3 tbsp Candied Honey - Golden Nectar Leatherwood or Golden Bee Honey
A wedge of Danish feta
Salt and pepper to taste.

This recipe can easily be roasted on a campfire or in an oven. If using an oven preheat oven to 200c. Placed whole carrots or your root vegetables in a pan or tray, cover with olive oil and salt and pepper. Mix until all vegetables are completely covered. Drizzle honey over the top.

If using a campfire, follow the same process as above and wait until you have some hot coals to place your pan on.

Roast until just tender, about 30 mins, drizzle more Candied Honey if so desired, top off with a generous crumble of feta.
